Matthew Anthony Corral went to Oaks Christian School in Westlake Village, California, and later transferred to Long Beach Polytechnic High School in Long Beach, California. He played college football at the University of Mississippi (Ole Miss) from 2018 to 2021.

Matt Corral played in the 2018 U.S. Army All-American Bowl. Matt Corral was named the starting quarterback entering the 2019 season. He led the Ole Miss Rebels to the 2021 Outback Bowl and was named its MVP following their victory against the Indiana Hoosiers. He was selected by the Carolina Panthers in the third round (94th overall) of the 2022 NFL Draft.
