Parkinson participated in all 14 Stanford games as a rookie in 2017, catching ten catches for 97 yards and four touchdowns.

Parkinson appeared in 13 games (nine starts) as a sophomore in 2018, catching 29 catches for 485 yards and seven touchdowns.

Parkinson recorded six catches for 166 yards and four touchdowns against Oregon State on November 10, matching the Stanford record for most touchdowns by a tight end in a single game. He was named honorable mention All-Pac-12 Conference.

Parkinson stated after his junior season in 2019, in which he recorded 48 receptions for 589 yards and one touchdown, that he will forego his senior year and enter the 2020 NFL Draft.
